Andrew grew up in China and spent years traveling across the United States, carrying the cuisines of his childhood with him — Chinese, Southeast Asian, the kind of cooking where a sauce can make or break a dish.
While perfecting his own personal sauces and seasonings — flavors he eventually wanted to bring to the world — several recipes required deep peanut flavor. But every powder on the market had been defatted, stripping out precisely the richness that makes peanuts worth cooking with.
